Millet
Millet is a versatile cereal grain common in many global cuisines. Used for thousands of years, it is still prominently featured in the cuisines of the Asian and African continent. Millet grain is small and round, and there are different types that are useful in cooking. It is gluten free and nutritious.
Millet is slightly sweet and corn-like in flavor. If cooked whole, millet is soft and almost cous cous like in texture. It can be used in soups, porridges, and salads.

Millet can also be ground and used as a flour (see here for making millet flour at home). As a flour it can be used to make breads, pancakes, or other baked goods.
Millet Bread Recipe
This post gives a simple millet bread recipe that you can easily make at home. The main ingredients are millet flour and water. For this recipe, I use proso millet, or white millet, but you can substitute a different kind if you prefer. Salt is added for flavor, and baking powder to lighten the bread with some additional leavening. For added nutrition, flavor, and texture, I’ve added chia seeds and pumpkin seeds.
Gluten Free Millet Bread
This millet bread is gluten free. Millet grain is naturally gluten free, so as long as no other gluten containing ingredients are added, the recipe will be gluten free.
How To Make Millet Bread
Millet Bread Ingredients
The ingredients you need to make this bread are:
- Millet flour
- Water
- Salt
- Baking Powder
- Chia seeds (optional)
- Pepitas (optional)
Firstly, you need millet flour. You can either:
1.) buy the millet flour, or
2.) buy whole millet and make the flour at home (see here for making millet flour at home).
For this recipe, I got Bob’s Red Mill whole millet (which is proso millet). I stone milled it at home using a Nutrimill Harvest Grain Mill.
Put all of the dry ingredients in a large mixing bowl (excluding pepitas). Mix all of the dry together (millet flour, baking powder, salt, chia seeds). Add the water and mix the batter thoroughly. Let the batter sit for ten minutes.
Pour the batter into your baking pan. Sprinkle the pepitas onto the batter and put into a 350 deg oven. Bake for about 15 to 20 minutes, rotating the pan halfway through. Bread should have an internal temperature of 180 deg, and/or an inserted knife should come out clean.
Let the bread cool on a wire rack for at least ten minutes.
Serving This Wholesome Bread
Cut the millet bread into squares. Enjoy by itself, or top with nut butter or jam. The bread is very good toasted, and makes a great breakfast toast. To get it nice and toasty, cut the bread square in half lenth horizantally (so you have an upper square and a lower square). Toast the square until the inner part becomes golden brown. Enjoy!

- 1 oven 350 deg
- 1 Baking pan 12" x 9" x 1.5"
Ingredients
- 2.5 cups millet flour store bought, or preferably milled or blended at home
- 3 cups water
- 1 tbsp chia seeds
- 2 tbsp pepitas
- 1.5 tsp salt
- 2 tsp baking powder
Instructions
- Preheat oven to 350 deg.
- Thoroughly mix all dry ingredients except for pepitas in large mixing bowl. Add the water and mix well. Let the batter sit for ten minutes.
- Line baking pan with greased parchment paper. If you don't have parchment paper, heavily grease the pan. Pour batter into pan. Sprinkle pepitas on top of bread batter, and slightly push into batter.
- Put into oven and bake for ten minutes. Rotate the pan and bake for another ten minutes, until internal temp reaches 180 deg, or until an inserted knife comes out clean.
- Let rest for 10 minutes on a wire rack.
