Ingredients
  

Air Fried Butternut Squash

  • 1.5 lb butternut squash, peeled and cut into 0.25 inch slices
  • 2 tbsp olive oil
  • salt, to taste

Garlic Ginger Honey Butter Sauce and Parsley

  • 0.5 cup honey
  • 0.5 cup butter unsalted, cut into cubes
  • 3 cloves garlic, grated
  • 1 tbsp fresh ginger, grated
  • 1 tbsp lemon juice, freshly squeezed
  • 0.25 cup parsley, chopped

Instructions
 

  • Toss butternut squash with olive oil and salt. Put into air fryer at 400 deg F for about 20 minutes. Shake butternut squash every 7 to 10 minutes to redistribute for even cooking. They are finished when they have got some color and are cooked all the way through.

  • Heat up honey on stove. Add grated garlic and ginger to honey and whisk. Allow to cook for a few minutes. Turn off heat. Whisk in butter while honey is still hot. Season with salt and freshly squeezed lemon by whisking.

  • Toss air fried butternut squash with chopped parsley. Check seasoning - add salt if necessary. Drizzle sauce over butternut squash. Serve immediately.
