Air Fryer Butternut Squash With Garlic Ginger Honey Butter Sauce

1.5lbbutternut squash, peeled and cut into 0.25 inch slices
2 tbspolive oil
salt, to taste
Garlic Ginger Honey Butter Sauce and Parsley
0.5cuphoney
0.5 cupbutter unsalted, cut into cubes
3 clovesgarlic, grated
1tbspfresh ginger, grated
1 tbsplemon juice, freshly squeezed
0.25cupparsley, chopped
Instructions
Toss butternut squash with olive oil and salt. Put into air fryer at 400 deg F for about 20 minutes. Shake butternut squash every 7 to 10 minutes to redistribute for even cooking. They are finished when they have got some color and are cooked all the way through.
Heat up honey on stove. Add grated garlic and ginger to honey and whisk. Allow to cook for a few minutes. Turn off heat. Whisk in butter while honey is still hot. Season with salt and freshly squeezed lemon by whisking.
Toss air fried butternut squash with chopped parsley. Check seasoning - add salt if necessary. Drizzle sauce over butternut squash. Serve immediately.
