Air Fryer Rutabaga Fries

If you like rutabaga, these air fryer rutabaga fries with herb garlic yogurt are an easy low carb treat. A parmesan and lemon garlic dipping sauce stand up to the bold earthy flavor of the rutabaga.

Ingredients
  

  • 2 lb rutabaga
  • 2 tbsp olive oil
  • 1 bunch fresh parsley, chopped
  • 1 cup parmesan, grated or shredded
  • 1 cup whole plain yogurt
  • 2 clove garlic, grated
  • 1 each lemon, juice and zest
  • salt and pepper

Instructions
 

  • Preheat air fryer to 390 deg.
  • Peel rutabago and cut into batons. The thick cut french fry shapes should be about 0.25 inch to 0.5 inch on the sides.

  • Toss rutabaga fries with olive oil, salt, and pepper. Fry in air fryer for eight to ten minutes. Then shake the air fryer basket and redistribute the rutabaga fries. Continue cooking another eight to ten minutes, or until rutabaga fries are golden brown and cooked through.
  • Meanwhile make the lemon garlic dipping sauce. Mix the yogurt, lemon juice, lemon zest, grated garlic, salt, pepper, and parsley (save some parsley for garnish).
  • When rutabaga fries are done, toss them with parmesan and parsley. Serve and garnish with remaining parmesan and parsley. Serve with garlic lemon yogurt sauce.
