Italian Baked Eggs In Tomato Sauce with Mozzarella Cheese
These Italian baked eggs in tomato sauce are a simple, low carb home run. Finish baking with some mozzarella cheese for a delicious, filling, and keto-friendly meal.

0.25cupmozzarella cheese
2tbspfresh parsley, chopped
1 tbspparmesan cheese, grated
Instructions
Preheat oven to 400 deg. F. Ideally, the marinara sauce should be room temperature or hotter. If the marinara sauce is cold, the eggs will take longer to cook in oven. Put marinara in a small baking dish so that bottom is covered by at least 0.5 inch. Make two small round impressions in the sauce with the back of a spoon. Crack one egg in each impression.
Bake until egg whites are cooked through (about 20 minutes). Sprinkle mozzarella on eggs about five minutes before eggs are finished cooking. Sprinkle with chopped parsley and serve immediately.
