Millet Bread

This millet bread recipe is a simple way to incorporate nutritious millet into your diet. This easy gluten-free bread is slightly sweet and corn-like in flavor and makes great breakfast toast. Add chia and pumpkin seeds for additional nutrition.

Equipment

  • 1 oven 350 deg
  • 1 Baking pan 12" x 9" x 1.5"

Ingredients
  

  • 2.5 cups millet flour store bought, or preferably milled or blended at home
  • 3 cups water
  • 1 tbsp chia seeds
  • 2 tbsp pepitas
  • 1.5 tsp salt
  • 2 tsp baking powder

Instructions
 

  • Preheat oven to 350 deg.
  • Thoroughly mix all dry ingredients except for pepitas in large mixing bowl. Add the water and mix well. Let the batter sit for ten minutes.
  • Line baking pan with greased parchment paper. If you don't have parchment paper, heavily grease the pan. Pour batter into pan. Sprinkle pepitas on top of bread batter, and slightly push into batter.
  • Put into oven and bake for ten minutes. Rotate the pan and bake for another ten minutes, until internal temp reaches 180 deg, or until an inserted knife comes out clean.
  • Let rest for 10 minutes on a wire rack.
