Bench Scraper
The bench scraper is basically a flat metal or plastic sheet, with or without a handle. It is also called a dough scraper, pastry scraper, or bowl scraper. The name bench scraper suggests its primary intended purpose is to scrape a work bench free of dough or other ingredients. The bench scraper can do this; it can also cut, measure, portion, transport, section, chop, and more.
I use a bench scraper everyday, through out the day. And I’m not talking about just to work with dough. A good organizational trick is to keep a bench scraper next to your cutting board. Use it to scrape the cutting board clean between ingredients, and to transport prepped ingredients from the cutting board elsewhere. Everytime I chop something on my cutting board (e.g. onions), I then have to put them into a pile and then move them somewhere, e.g. a hot pan. Having a bench scraper handy is the best way to to do this. I can scoop them up and move them as quickly and cleanly as possible. This is MUCH better than trying to use your hands or your knife to do the transporting for you.

The dough scraper either comes in metal or plastic. A metal bench scraper is harder and heavier. It is better for cutting, portioning, and chopping.
A plastic bowl scraper is lighter and flexible. It can mold to the shape of the surface, such as a bowl. A plastic bench scraper is better for scraping a bowl or other curved surface. Plus it’s lighter, and it’s better for transporting ingredients. Also you can use a plastic bench scraper to push ingredients through a sieve or tamis, but not so with a metal bench scraper.
