Lentils are nutrient-dense legumes that are high in protein, fiber, and a variety of vitamins and minerals. By milling lentils into flour and using this flour as the base for bread, you can create a delicious and nutritious bread that you can feel good about eating.

The lentil recipe in this post is simple and easy to make at home. It is also easily adaptable, meant to act as a base recipe, so that you can play around with it to make your lentil bread how you like.

This recipe makes bread from green lentils, but you can make red lentil bread as well. I’ve made red lentil bread with tomatoes, chili powder, garlic, and the results were delicious. You could also mix different types of lentils in the same bread, depending on what you have in the pantry.

Gluten Free Lentil Bread

Lentils are naturally gluten free. As long as you don’t add any ingredient to your legume bread recipe that contains gluten (like wheat, barley, or rye), you will end up with gluten free lentil bread.

Bell Pepper Bread

I include vegetables in this recipe for flavor and added nutrition, as well as color. For this particular recipe, I add bell peppers and tomatoes, which go well with lentils. In particular, I really like the combination of bell pepper and green lentils in this bread.

Before adding the tomatoes or bell peppers to the batter, I first liquefy them in the blender with some water. I want the taste of bell pepper bread without any small pieces of bell pepper. Same goes for the tomato. The tomato and bell pepper bread also gets some nice color from these ingredients.

How To Make Lentil Bread

To make this lentil bread, the main thing you need is lentil flour. You can make this on your own using a Nutrimill.

Lentil Bread Recipe

The main thing is to make the lentil flour. You can do this using a home mill (see here for a review of the Nutrimill Harvest Grain). This will produce the best results. You can mill the lentils fresh before you make the recipe, which maximizes the nutritional benefit and taste. Also, you can use whatever lentils you happen to have in your pantry. I would recommend getting a home mill – I use my home mill every week (plus I have one at my job). You can mill lentils, chickpeas, beans, wheat, split peas, etc.

Or you can use a blender to make your lentil flour. First you blend the lentils into a powder, and then sift the powder through a fine mesh sieve to get your flour. Put what’s left in the sieve back in the blender and repeat the process. See more about making lentil flour in the blender here.

After you have your flour, you need to liquefy the bell pepper and tomatoes in the blender. Use some of the water if needed. Mix all your dry ingredients together. Add the water, bell peppers, and tomatoes to form the batter. Mix well.

Pour batter into baking pan. Bake in a 350 deg oven for 15 – 20 minutes, rotating halfway through. The bread is done when a knife comes out of bread cleanly. Take out of oven and let rest on wire rack for ten minutes.

Enjoying the Lentil Bread

I enjoy my lentil bread toasted simply with some olive oil, black pepper, and flaky salt. Also, some fresh herbs and a slice of tomato are delicious.

Red Lentil Bread

In the recipe in this post, I use green lentils but red lentil bread is delicious as well. Tomatoes and garlic are great in red lentil bread. Use this recipe as a starting point, and you can swap in red lentils and play around as you like.

  • 1 oven
  • 1 Baking pan 12" x 9" x 1.5"


  • 2.5 cups Green Lentil flour red lentil flour will work as well
  • 1 cups tomatoes (liquefied in blender) preferably peeled fresh roma tomatoes that you have blended
  • 2 cups water
  • 3 each bell peppers (red or yellow) liquefied in blender with some of the water
  • 1.5 tsp salt
  • 2 tsp baking powder


  • Preheat oven to 350 deg.
  • Thoroughly mix all dry ingredients in large mixing bowl. Add liquefied bell peppers and tomatoes and water and mix well. Let batter sit for ten minutes.
  • Line baking pan with greased parchment paper. If you don't have parchment paper, heavily grease the pan. Pour batter into pan.
  • Put into oven and bake for 15 to 20 minutes, rotating halfway through. Bake until internal temp reaches 180 deg, or until an inserted knife comes out clean.
  • Let rest for ten minutes on a wire rack.
