Vegan Protein Bread
This vegan protein bread is a great way to enjoy nutritious bread guilt free. The base of the bread is green split peas, which offer a plethora of nutritional benefits. Green split peas are high in plant based protein (about 25% protein), dietary fiber, vitamins, and minerals. Yellow split peas could also be used.
The bread also contains flax seeds, another nutritional powerhouse. They are also high in protein and dietary fiber, and in addition add healthy omega 3’s that are crucial in a vegetarian/vegan diet.
High Protein Bread
This bread is high in protein due to the green split peas and flax seeds. As such, it is great to eat after a workout to help build muscle. Other sources of protein could also be used in the high protein bread, including nuts, nut butters, chia seeds, or eggs. Of course, adding eggs would mean it is not vegan bread but vegetarian bread.
Gluten Free Vegan Bread
This vegan bread does not use any animal products. Since it is all plant based protein, it is important to add flax (or chia seeds) for omega 3 fatty acids. None of the ingredients contain gluten so the bread is gluten free.

Vegan Protein Bread Recipe
The main thing you need for this recipe is green split pea flour (alternatively you could use yellow split peas). The best way to get this flour is to mill it yourself rght before you make the bread. You could do this using a home mill (see here for review of Nutrimill Harvest Grain Mill). This is what I do at home and at work, and it produces the best results in terms of both taste and nutrition.
Alternatively, you could mill the green split peas in a high speed blender using the method described here. Basically, you blend the split peas until they are a powder, and then pass this powder through a fine mesh sieve. Whatever passes through the sieve is your finished flour. Whatever doesn’t pass through the sieve goes back in the blender, and repeat the process.

If you have whole flax seeds (which I recommend), you need to blend them first in a blender with the water. If you have ground flax seeds, just mix the ground flax seeds with water.
Mix all the dry ingredients (split pea flour, baking powder, and salt) together in a mixing bowl. Add flax and water and mix well. Let batter sit for ten minutes.
Pour batter into baking pan. Bake in 350 deg oven for 15-20 minutes, rotating halfway through. Bake until an inserted knife comes out clean.
Serving the Vegan Protein Bread
Enjoy the bread simply toasted with some olive oil, salt, and black pepper.

Ingredients
- 2.5 cups green split pea flour
- 3 cups water
- 2 tbsp flax seed powder
- 1.5 tsp salt
- 2 tsp baking powder
Instructions
- Preheat oven to 350 deg.
- Mix flax seed powder with water. Let sit for five minutes
- Mix all dry ingredients in large mixing bowl. Add water and flax seed mixture Let batter sit for ten minutes.
- Line baking pan with greased parchment paper. If you don't have parchment paper, heavily grease the pan. Pour batter into pan.
- Put into oven and bake for 15 to 20 minutes, rotating halfway through. Bake until internal temp reaches 180 deg, or until an inserted knife comes out clean.
- Let rest for ten minutes on a wire rack.
